Tomato Soup
I make a huge pot of it and we eat it on and off for a few
weeks...so
my portions here are to make a large pot.
1 or 2 family size cans of Tomato soup
1 or 2 cans of beef broth
2 cans of diced tomatoes with green chilies
juice of 1 lime
whole cumin seed
fresh garlic
fresh cilantro
chili powder
I chop about 5 individual cloves of garlic and with (guessing here)2
teaspoons of cumin seed saute in soup pot with olive oil.
Remove from heat and add tomato soup, diced tomatoes, beef broth and
lime juice. I add water, but don't know how much...I fill a beef
broth
can with water and add some water to my lime juice...sorry...I just
don't measure...but you can tell if it needs more water by taste.
Simmer and season with chili powder, black pepper and more cumin if
desired
I usually add canned pinto beans or diced zuchinni
Right before removing from heat, add chopped fresh cilantro
Serve with melted cheese if desired
