NUN'S PUFFS
1/2 cup margarine
1 cup milk
4 beaten eggs
3/4 cup All-purpose flour
1-2 tablespoons sugar
Generously grease twelve 2 1/2" muffins cups including edges
and around the top of each cup. In a 2 quart saucepan melt
margarine. Add milk; bring to boiling. Add flour all at once; stir
vigorously. Cook and stir until mixture forms a ball that does not
separate.
Remove from heat; cool slightly, about 5 minutes.
Add eggs, one at a time, beating with a wooden spoon after each
addition for one minute or until smooth. Half fill muffin cups;
sprinkle with sugar. Bake 375 degrees for 40 to 45 minutes or
until Golden brown and puffy. Remove to rack; serve immediately.
Note puffs slightly fall when removed from oven.
Note: I have always omitted the sugar and added instead, shredded
cheese, bacon bits and finely chopped onions.
